Roasted Baby Potatoes go well with anything. Serve them on the side of meat, fish, or a large entree salad. Reheated leftovers make a delicious snack.

Roasted Baby Potatoes

Roasted Baby Potatoes are a quick addition to any meal. I used to serve them to my husband with a large caesar salad as a meal after his long day at work.

This Roasted Baby Potato recipe can be used with any kind of potato as long as they are cut into even chunks, but I like using baby potatoes because they don’t need peeling. Bake your potatoes until they are crispy and eat them while they are piping hot. If you don’t get the chance to eat them straight out of the oven, they reheat very well in the oven or microwave.

How long does it take to roast potatoes at 350?

Cooking time may vary, but it takes about 45 minutes for the potatoes to get brown and crispy.

What can I use instead of Onion Soup Mix?

We used Lipton’s Kosher Onion Soup Mix because it’s simple and tasty. However, you can always substitute a mixture of finely diced onions, garlic powder, salt, and dried parsley.

Ingredients

  • 2 lbs. potatoes
  • 1/4 cup olive oil
  • 1 packet Lipton's Kosher Onion Soup Mix

Instructions

  1. Preheat Oven to 350 degrees. Spray or cover one large baking sheet with foil or parchment paper. 

  2. Cut potatoes into even sized chunks. 

  3. In a large mixing bowl, combine potatoes, olive oil and Onion Soup Mix. 

  4. Spread potatoes evenly on baking sheet. Roast in oven for 45 minutes or until potatoes are crispy on the outside and fluffy on the inside.
