Roasted Baby Potatoes

Roasted Baby Potatoes go well with anything. Serve them on the side of meat, fish, or a large entree salad. Reheated leftovers make a delicious snack.

Ingredients

  • 2 lbs. potatoes
  • 1/4 cup olive oil
  • 1 packet Lipton's Kosher Onion Soup Mix

Instructions

  1. Preheat Oven to 350 degrees. Spray or cover one large baking sheet with foil or parchment paper. 

  2. Cut potatoes into even sized chunks. 

  3. In a large mixing bowl, combine potatoes, olive oil and Onion Soup Mix. 

  4. Spread potatoes evenly on baking sheet. Roast in oven for 45 minutes or until potatoes are crispy on the outside and fluffy on the inside.
