Savory Roasted Carrots

  • 3 tablespoons olive oil divided
  • 2 pounds carrots washed and unpeeled
  • 1 teaspoon kosher salt
  • 1/2 teaspoon black pepper
  • 1 tablespoon fresh thyme leaves chopped; can substitute 1 teaspoon dried thyme
  • 1 tablespoon fresh rosemary leaves chopped: can substitute 1 teaspoon dried rosemary


  1. Preheat the oven to 375 degrees

  2. Slice carrots into rounds and toss with olive oil, salt, black pepper, thyme and rosemary.  Line a baking sheet with parchment paper or aluminum foil.

  3. Spread on  baking sheet in a single layer.  Roast carrots for 30 minutes, turning once halfway through.  Remove from oven.

  4. Preheat broiler to high.  Broil carrots for three minutes or until lightly charred.
