Peanut Sesame Noodles

Peanut Sesame Noodles are a delicious mixture of pasta, nuts and asian flavors.

  • 2 cups broccolini chopped
  • 16 ounces thin spaghetti broken in half
  • 1/2 cup smooth peanut butter
  • 4 cloves garlic minced
  • 6 tablespoons peanut oil
  • 1-2 tablespoon sesame oil
  • 1/4 cup soy sauce
  • 1/2 cup shredded carrots
  • 1/2 cup peanuts


  1. Fill a large mixing bowl with ice water. Set aside.

  2. Bring a large pot water mixed with a teaspoon of salt to boil.

  3. Drop broccolini into boiling water.  Boil for one minute.

  4. Using a strainer, remove broccolini from boiling water and plunge immediately into bowl of ice water.  Drain.

  5. Add thin spaghetti to boiling water.  Stir and cook for 7-8 minutes.  Drain.

  6. In a small mixing bowl, combine peanut butter, garlic, peanut oil, sesame oil and soy sauce.  Whisk to combine.

  7. Put drained spaghetti into large mixing bowl and add sauce contents from small bowl.  Toss to combine.  Garnish with shredded carrots and peanuts.

  8. Noodles may be eaten immediately or chilled to eat cold.
