Aunt Ruthie’s Apple Coffee Cake
My Aunt Ruthie’s Apple Coffee Cake is moist and delicious and soon to be one of your favorites. It mixes up quickly with a wooden spoon – no stand mixer required. For the prettiest cake, make sure the filling does not touch the sides of the pan. An apple slicer is the perfect gadget for this recipe, because the chunks of apple are the right size and the core is easily discarded.
My grandmother and her sisters were all wonderful bakers. Aunt Ruthie’s Apple Coffee Cake was the star of many family get-togethers. Every time I look at the recipe, I imagine the smell of coffee brewing. If you like apple pie, you will love the flavor of my Aunt Ruthie’s Apple Coffee Cake.
Why are coffee cakes called coffee cakes?
Any cake can be a coffee cake, as it refers to a cake enjoyed with a cup of coffee. In America, coffee cakes are usually a single layer cake flavored with cinnamon. Feel free to enjoy this cake with or without coffee, as it is delicious either way.
What is the difference between crumb cake and coffee cake?
A crumb cake is a type of coffee cake, usually referred to as a “New York style” coffee cake. It becomes a coffee cake when served with coffee!
What kind of apples do I use for this cake?

Aunt Ruthie's Apple Coffee Cake
Aunt Ruthie’s Apple Coffee Cake is perfect for breakfast, dessert or a mid-morning snack with a cup of tea or coffee. It has all of the apple pie flavor with no crust to roll out.
Ingredients
- 6 apples cored, pared and sliced
- 5 tablespoons sugar
- 2 cups sugar
- 5 tablespoons cinnamon
- 3 cups all-purpose flour
- 3 teaspoons baking powder
- 1 teaspoon salt
- 1 cup vegetable oil
- 4 eggs beaten
- 1/4 cup orange juice
- 1 tablespoon vanilla
Instructions

Preheat oven to 375 degrees. Spray a large bundt pan with non-stick spray.

Combine apple pieces, 5 tablespoons of sugar and cinnamon in a colander in the sink. Set aside to drain.

Sift flour, baking soda, the rest of the sugar, and salt into a large mixing bowl.

Make a well in the center of the dry ingredients. Pour in oil, eggs, orange juice and vanilla. Beat with a wooden spoon until well-blended.

Spoon 1/3 of batter into a greased 9" or 10" tube or bundt pan. Place a ring of the apple mixture over batter, being careful not to let the apples touch the side of the pan. Cover completely with 1/3 of batter. Add balance of apples to pan, and spoon remaining batter over them.

Bake at 350 degrees for 1 and 1/4 hours. Allow cake to cool in pan completely before unmolding.
My dad and I love cakes like this one, no frosting and with fruit. I wish he was still around for me to make this but I am going to give it a try and keep him in my mind while savoring the great cake this is. Thanks for posting, gave me beautiful memories of him.
