Oven Roasted Asparagus is a harbinger of spring and a perfect side dish for your dinner table. This version is easy and a delicious way to get vegetables onto the table. The best part about asparagus is that you don’t even need to cut it at the table–it’s always proper to eat asparagus with your fingers, even in the most formal settings!

I like to make this recipe on parchment paper or a non-stick mat (such as Silpat). They come in all kinds of sizes to fit your pan and are reusable, which saves money and is much better for the environment. I also just discovered the joys of using pre-cut parchment paper, as the sheets don’t curl up and they lie flat on your pan.

How do you clean and cook asparagus?

Before cooking, wash your asparagus thoroughly and pat dry. Some people peel asparagus, but we find it easier to just bend it until the woody end snaps off at the point where the spear becomes tender. You can microwave, steam, boil, grill or sauté it, but our favorite way of preparing it is by roasting. Oven Roasted Asparagus becomes crispy and salty, almost like a good-for-you pretzel.

What happens when you eat too much asparagus?

Some people notice an unusual smell to their urine after eating asparagus. This is temporary. Scientists are not sure whether everyone produces this odor and only some people have the gene to smell it, or whether only some people with the gene actually produce the odor. Either way, it’s totally safe to eat.

 Roasted Asparagus is a delicious side dish made in less than 20 minutes with only three ingredients.

Ingredients

  • 1 Bunch Asparagus
  • 2 Tablespoons Olive Oil
  • Kosher Salt to taste

Instructions

  1. Preheat oven to 500 degrees. Line a baking sheet with parchment paper or non-stick mat. 

  2. Pick up each asparagus spear and bend in half until the woody bottom snaps off. Discard bottom. 

  3. In a large bowl, toss asparagus with olive oil and salt.

  4. Spread spears on lined baking sheet and roast for 15 minutes. Serve immediately.

    and i love easy and simple
    I would rather have simple, yummy and tasty than
    perfectly shaped
    so roasting is the way to go for me
    btw was that lemon zest in the second photo ?
