Sweet and Savory Sweet Potatoes

Ingredients

  • 6 large sweet potatoes
  • 1/4 cup salt
  • 1/4 cup turbinado sugar
  • 1/4 cup brown sugar
  • 1/2 tablespoon garlic powder
  • 3/4 tablespoons onion powder
  • 1 tablespoon paprika
  • 1 tablespoon chili powder
  • 1 tablespoons black pepper
  • 1 teaspoon cayenne pepper
  • 3/4 tablespoon thyme
  • 1/2 tablespoon cumin
  • 1/2 teaspoon nutmeg
  • 1/2 teaspoon cinnamon

Instructions

  1. Preheat oven to 350 degrees.

  2. Cut sweet potatoes into large chunks or cubes.  In a large bowl, toss pieces with olive oil.  Set aside.

  3. In a smaller bowl, mix salt, sugar, brown sugar, garlic, onion, paprika, chili powder, pepper, cayenne pepper, thyme, cumin, nutmeg and cinnamon.

  4. Toss sweet potato cubes with the rub.  Place in a large baking pan and cover with foil.  Bake one hour or until done.
